I've been hearing the buzz about the documentary Forks Over Knives for a while saying it will convert you into being a vegan. Being a vegan was a challenge I was going to take for a month last year until I found out I was pregnant. I could totally be a vegetarian but cutting out dairy seemed super extreme that I could never do. Never say never is what my mom used to say.

Who doesn't like Nutella? It's been a staple this whole pregnancy for me so I was pretty excited to see this super easy recipe for Nutella hot chocolate on Pinterest.

Nothing says spring/summer better than salads for dinner. For this one you'll need leftover bread, tomatoes, basil and balsamic dressing.
I don't made panzanella often but when I do, I wish that I would make it more. This salad is hearty but I still added a few cubes of mozzarella to give it a bit more protein.

Potato Frittata
Eggs just aren't for breakfast in our house -- there are times when eggs are perfectly fine for dinner. During the week, it's a challenge to find good eats that are quick, healthy and use fresh ingredients and this little meatless number was a snap to get on the table in under 30 minutes.
